Polyphenolic compounds are a group of secondary metabolites in plants; these molecules widely distributed fruits, vegetables, and herbs can be found the vacuoles plant cells. The current trend is their extraction to study applications several areas, such as food, cosmetic, pharmacology industry. This review article presents critical analysis polyphenol using solid-state fermentation. parameters extraction, substrate, temperature, pH, inoculum microorganism, moisture, water activity, discussed detail. biotechnological method affects concentration recovery polyphenolic compounds. Some sources that rising for biological properties belong agro-industrial wastes, peels, seeds, pulp some fruits. Solid-state fermentation an innovative environmentally friendly tool contribute generating value-added agrifood from wastes.
